This is an easy to make tea loaf. If the honey is solid, melt it slightly before trying to beat it into the egg mixture.
Ingredients:
2 and 1/2 cups all purpose flour
1/3 cup brown sugar, packed
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1/2 cup butter flavour Crisco
1 cup raisins
1/2 cup chopped walnuts, optional
2 large eggs
1/2 cup milk
1/2 cup honey
2 teaspoons finely grated lemon rind
Method:
Mix together flour, brown sugar, baking powder, baking soda and salt in a large bowl. With a pastry blender cut in shortening to ressemble coarse crumbs. Stir in raisins and nuts.
In another bowl, beat eggs, milk, honey and lemon peel together. Stir this mixture into the flour mixture, stirring just enough to moisten all. Spoon batter into a greased and floured 9x5 inch loaf pan (the size of the pan is important).
Bake in a 325F oven about 50 minutes or until a tester comes out clean. Do not overbake.
Let cool in the pan for 10 minutes before turning out onto a wire rack. When cool wrap tightly in plastic wrap. It is best kept for one day before slicing.
