This delicious square is one my mother used to make.
Short Crust Pastry
1 cup all purpose flour
1/2 cup margarine
1/2 teaspoon salt
1/2 teaspoon baking powder
1 to 2 tablespoons cold water to mix
Sift together flour, salt and baking powder. Cut in margarine until crumbly. Add enough cold water to mix. Line a shallow 9x9 inch baking pan with 1/2 the mixture.
Fruit Mixture
1/2 cup currants
1/2 cup raisins
1 tablespoon granulated sugar
1 tablespoon syrup
4 tablespoons water
1/2 cup thick plum jam
Put these ingredients into a pan and heat gently until blended. Simmer about 5 minutes. Cool. Spread cooled mixture evenly over the pastry. Cover with remaining pastry. Seal edges together. Bake in a 350F oven 20 -25 minutes or until pastry is cooked. When cool, trim off edges, cut into squares and sprinkle with sugar.
