Each fall I buy a carton of Okanagan grapes. At one time I made jelly with them and sometimes a pie but often now we end up eating them as is because they are so good. However for a change from other pies you might like to try this recipe.
Pastry for a 2 crust pie
4 cups Okanagan blue grapes
3/4 cup of sugar
1 and 1/2 tablespoons lemon juice
1 tablespoon finely grated orange peel
1 tablespoon quick cooking tapioca
Stem grapes and slip pulp out of the skins. Set skins aside. Cook the pulp until the seeds separate.
Press the pulp through a colander to remove the seeds. Combine the pulp and skins.
Mix together sugar, lemon juice, orange peel and tapioca. Let sit for 15 minutes. Add to grape mixture.
Line a 9 inch pie plate with pastry. Pour the grape mixture in. Make a lattice for the top.
Bake in a 375 degree oven about 35 minutes or until pastry is cooked and filling is bubbly.
