Thanksgiving is a holiday steeped in food traditions and the perfect time to celebrate the bounty of the harvest with peak-of-the-season produce.
At our local farmers’ market you’ll find an abundance of squashes, apples, garlic, cranberries, cheeses and other favourite foods ready to grace the Thanksgiving table.
To inspire you, ‘Beyond’ the Kitchen Door is featuring an array of Thanksgiving menu ideas from local chef, cookbook author and Food Safe instructor Vivian Cruise as she talks turkey and fresh from the field-to-fork flavours this Saturday from noon to 4 p.m.
In celebration of the farmers’ market, Vivian offers a bumper crop of inspired recipes that will transform an array of fresh pickings into an impressive holiday feast.
Learn how, if short on time but still wanting to impress family and friends with a memorable meal, to debone, stuff, roll and cook a whole turkey.
Take home the math equation on how to calculate the amount of stuffing, gravy and turkey to prepare; and how the most reliable holiday helpers are a few of Vivian’s favourite gadgets. Bring your own how-to questions.
Looking for new ways to use the turkey over the next day … or two? For your tasting pleasure, from her cookbook Ocean Plaits & Grizzly Bait, chef Cruise prepares a few of her favourite dishes using leftover turkey.
