How was your Thanksgiving? Pleasant I hope. I imagine that today you are dealing with leftover turkey. Soup? Turkey pot pie? Hot turkey sandwiches? The options seem endless. For me that is the problem. After a couple days I have had it with the old bird.

I actually did not mean to mention turkey. I had it in my mind to discuss that this is the season where junk food comes forth and seems to multiply. Thanksgiving, Halloween , then Christmas. Why is it like that?

So in kind of a roundabout way I was going to discuss apples. Such good looking apples in bins framing all the food we should ignore.

An apple a day should keep the doctor away. At least that seems to be the case if one considers all the good food value you get for a mere 80 calories.

An apple is filled with what are called phytonutrients. A big word for good things that could happen if you eat apples. Apples can help reduce the plaque in our arteries and lower problems from diabetes. It has lots of fibre which helps prevent colon and rectal cancer.

I gather apples will lower cholesterol and help fight obesity. Studies now show that the apple can be beneficial in preventing alzheimer’s disease.

I even read that a couple glasses of apple juice helps children with asthma.

Do some research about the apple. You already know there are many recipes that include apples, so let me share one I found for Apple Cake in an old cookbook of my mother’s. I suspect it comes from the depression days of the 1930s. Enjoy!

You will use four cups of sliced unpeeled apples, two cups brown sugar,(I used less than that) three eggs, nutmeg, one tsp baking powder, 1/2 cup cooking oil, cinnamon, two cups flour.

Just mix everything in one bowl ,put in a greased 13 x 9 pan. Cook at 350ºC for 40-45 minutes. Couldn’t be easier and good for you too.
